These important blood components are associated with cell differentiation and growth as well as protective functions against free radicals. In food processing the yellow to orange pigment β-carotene is used for food colouring of beverages, dairy and bakery products. Monitoring vitamin A and carotenoid levels in biological fluids, food or feed is important. Fast-soluble components are classically quantified by reverse-phase-HPLC which is expensive and work intensive.
